Summer Quiche Recipe with 6 Eggs & 3/4 cup Plain Yogurt
Ingredients:
- For the filling:
- 6 eggs
- ¾ cup plain yogurt (Greek yogurt recommended for creaminess)
- ½ tsp Dijon mustard (optional)
- Salt and pepper to taste
- Summer Vegetable Fillings (choose your favorites!):
- Chopped zucchini or summer squash
- Halved cherry tomatoes
- Sautéed onions, shallots, or leeks
- Fresh spinach, wilted and drained well
- Sliced mushrooms, cooked to remove excess water
- Cooked corn
- Diced bell peppers
- Cheese:
- Parmesan cheese
- Blue cheese
- Shredded Swiss or Gruyere cheese
- Feta cheese
- Cheddar cheese
- Monterey Jack cheese
- For the crust (optional):
- 1 (9-inch) pie crust, unbaked
- For Crustless: Use a greased pie pan.
Instructions:
- Preheat Oven: Preheat your oven to 350°F.
- Prepare Crust (if using): If using a pie crust, fit it into a pie plate and prick the bottom with a fork to prevent bubbling. You can optionally pre-bake the crust for a few minutes (3-5 minutes, or until it starts to dry).
- Prepare Filling:
- In a large bowl, whisk together the eggs, yogurt, mustard (if using), salt, and pepper.
- Prepare your chosen summer vegetables: sauté or cook to remove excess moisture if needed (especially for spinach or mushrooms).
- Add the prepared vegetables to the egg mixture and stir.
- Add your preferred cheese to the egg mixture and stir.
- Assemble Quiche: Pour the filling into the prepared pie crust (or greased pie pan for crustless).
- Bake: Bake in the preheated oven for 40-60 minutes, or until the center is set and the top is lightly browned. The quiche is done when it jiggles only slightly in the center.
- Cool and Serve: Let the quiche cool for at least 10 minutes before slicing and serving.
Notes:
- Crustless Option: This recipe can easily be made crustless by simply omitting the pie crust and using a greased pie pan.
- Customization: Feel free to experiment with different combinations of vegetables and cheeses based on your preference and what's in season.
- Make Ahead: Quiche is a great dish to prepare ahead of time as it keeps well and can be served cold. If reheating, it's best to do so in the oven to avoid overcooking the eggs.
